Organic Celery Soup

Break apart and carefully clean two bunches of organic celery, then cut it finely and boil in just enough water to cover it, until it is soft enough to rub through a coarse colander. Scald three pints of organic milk and add to the organic celery, and water in which it was boiled, with half a small organic onion cut finely, if liked. Then rub together a tablespoon each of organic butter and organic flour and stir it into the boiling soup. Season with organic sea salt and pepper to taste. Serve with organic crackers or strips of toasted bread.
